RECIPE: Beer with Floating Caramel Ice Cream

By: Sandra Ortiz

This recipe for beer with floating caramel ice cream is the combination you didn't know you needed in your life. We tried it and it's delicious!

We went to New York City’s famous Mexican terrace, "Cantina Rooftop," and learned how to add a different touch to traditional Mexican recipes using the popular Negra Modelo beer. The truth is that although we expected to find rather salty recipes, we were very surprised to see how renowned chef Rick Bayless (owner and founder of famous restaurants such as "Frontera Grill" and "Xoco") prepared a floating caramel ice cream with beer! Yes, it’s the same beer we’re used to using for micheladas or cheladas.

It should be noted that Rick Bayless, the chef who created this exotic recipe, has extensive experience in Mexican gastronomy. In fact, he has written several books specializing in Mexican food, and his delicious creations have earned him numerous recognitions and awards. In addition, he has hosted cooking shows and has several Mexican restaurants throughout the US, such as "Tortas Frontera", "Tortazo" and "Bar Sótano.”

The truth is that we probably would never have thought of combining a dark beer with ice cream, but we loved the taste! Once you try it, we are sure it will become one of your favorite drinks, even during the winter.
